To Hamamatsu's famous izakaya restaurant "Kitanose". One of the restaurants always have wanted to visit.
Their menu is lined with attractive dishes that are not familiar with, so was fascinated by them and stared at the menu.
Asked the master lady (the wife of the owner chef) to choose sake. She picked "Haginishiki" from Haginishiki Sake Brewery in Shizuoka City. The dry sake that goes well with foods.
Appetizers. Shiitake mushroom mousse and pickled eggplant.
"Aged flounder". A photo after forgot about photos and ate a lot. It had a sticky taste and was very delicious. The goodness of the master's skills was well perceived.
The next sake was Doi Sake Brewery's "Kaiun" from Kakegawa. Shizuoka sakes are mostly dry and have a modest aroma. They go well with foods without disturbing the tastes.
"Grilled horse mackerel". Thick and rich taste of horse mackerel.
Fried small potatoes, with porcini mushrooms and truffle powder. Completely knocked out by the delicious foods. Let's drink a little more tonight.
Foods dressed with vinegared miso. A luxurious gem with shellfish, scallops and crabs. Chopsticks couldn't be stopped.
Switched from sake to wine. Recommended by the chef's wife with the sommelier excellence license, Loire's "Vouvray (white)". Fitted with foods.
Also "Pietra (red)" from Puglia. The variety is 100% Susmaniello, which heard for the first time. Seems that it was found an endangered species on Salento Island. Gorgeous and full-bodied, but with a gentle sweetness, plum and pomegranate nuances, and a delicious finish! For Japanese foods, this kind of gentle red fit better than Cabernet.
Deep-fried tilefish. Served with Ponzu (soy sauce and citrus) jelly. With Ponzu jelly, could enjoy a more complex taste in the mouth than with plain Ponzu sauce.
Roasted pork belly block. Served with garlic sauce. Impressed by the perfect saltiness of the pork, and the mellow and rich garlic sauce.
In addition, Loire's "Miss Terre (white)". The wine that went well with the roasted pork was chosen by the chef's wife. It really fitted. Dry, Melon de Bourgogne (Muscadet) 100% natural wine. Muscadet is the wine for the roasted pork .
Understood the reason why foodies commute to Kitanose. First of all, the creative dishes of the owner chef are outstandingly wonderful. Seasoning and spices that make the ingredients delicious. The marriage of sake or wine with the first-class dishes is wonderful. Their sakes are all brewed in Shizuoka prefecture, and the wines chosen by the chef's wife are rich in variety. They do not have a drink menu, but a superb service that selects the sake and wines that suit the dish perfectly. Would recommend to ask the wife to select wines to match with foods at Kitanose.
Enjoyed a blissful time in Hamamatsu more than expected. Definitely want to visit again.

Seemed that the famous restaurant "Kitanose", which offers excellent foods and services, was also suffering from Coronavirus. On TV, there are many claims and reports that "Do not want to increase COVID tests, so all people should not go travelling or eating to avoid collapse of the medical system (as who are infected is not known)".
