Revisited the favorite Italian restaurant "Sessione", which is close to the Nijo market in Sapporo. The friendly chef is nice and tasteful Northern Italian foods are delicious. It seems careful about the ventilation through windows.
Tonight's menu. Have an urge to eat everything.
First, white wine. Chef recommends a Portuguese bio white. The grape is Gouveio. It is originally a Douro variety that is now cultivated throughout Portugal and is also used in port wines. The color is yellow-green, the scent is fresh, with citrus aroma and peach nuances. When taste it, it's fresh, barrel-ripe and long-lasting, it feels like aromatic and oaky Chardonnay. This is delicious. Addicted to Portuguese wine.
The starter is a ratatouille stew of various vegetables from Niseko. This is delicious so ask the recipe. Uses Tabasco and capers as good hidden tastes, but the chef still says only the good ingredients make it tasty.
Beetroot and Trevis salad.
And guinea fowl and wheat salad. The combination is so good.
Order white wine by the glass. Spergle, its etiquette looks like Elton J appearance. This white wine is from Emilia Romagna with robust taste. A grape with a strong acid called spergola, unfamiliar name, is matured to the prunus, then harvested, squeezed without exsanguination, and only the juice is fermented with natural yeast. Deep lemon yellow, fresh citrus flavor.
Sheep tripe from Shiranuka Hokkaido, accompanied with Sardinian sheep milk cheese. The Hokkaido tripe and Italian Pecorino cheese fit perfectly. The chef's sense is wonderful.
Red is the second Margaux wine, laid for 15 years, brought to me by an friend. After all, the queen of Bordeaux, the fruit and the finish are wonderful. It is mellow and sensual, but its structure is delicate and it goes well with the dishes.
Spaghettoni (thick spaghetti), Lemon and Niseko Lalala Farm's Zucchini. Zucchini is soft and is burned on surface. Keep enjoying and chopsticks don't stop.
Further, order two red glass wines. Iwamizawa's 10R winery's Zweigert.
And Scarafone. It is an organically grown natural yeast wine from Montecucco in Tuscany. 85% San Giovese Grosso and 15% Cabernet Sauvignon. It has a very soft fruit flavor, gently blending the gorgeousness of Sangiovese with the perfect fruitiness of Cabernet.
Roast style piglet. The dish is also delicious.
As written previously (10/27), owner chef is a disciple of the chef at the famous Italian restaurant "Vissani" in Olivito, who also operates the well known Italian restaurant in Karuizawa. Foods here are really delicious.
