(Kanazawa-1/Hamacho)日本美味しいもの巡り Japan delicious food tour

飛騨白川郷経由で金沢へ。白川郷はまだコロナの影響が残り、大半の店舗や宿がお休み状態。周辺地域の施設もお休み。

Went to Kanazawa via Hida Shirakawa-goh.  The stay at home policy for coronavirus still remains in Shirakawa-goh, and most stores and inns are closed.  Facilities of the area nearby are also closed.

東京は徐々に経済活動が戻りつつあるが、地方はまだまだと実感。現在、コロナ感染者数増(第2波)が東京だけに集中している理由も実感。地方の第2波はまだまだ先。

Economic activities are gradually resuming in Tokyo, but find that those at regional areas are still far behind.  Now realize the reason that increase in coronavirus  infection cases (the second wave) is currently concentrated only in Tokyo.  The second waves in the regional areas are still ahead.

夕方金沢へ。割烹「浜長」へ再訪。やっと6月から営業再開したばかりとのこと。ご主人の「はい、承知」で有名な店。

Arrived in Kanazawa in the evening.  Re-visited the Japanese authentic restaurant  "Hamacho".   It is said that the business has just resumed from June.  The restaurant is well know by its owner's response "yes, understood".

メニューから幾つか選び、あとはおすすめとお任せで。

お造り1 、こち、しまあじ、鱧、甘エビのお造り。金沢らしく昆布締めも。

Sashimi dish 1 with Kochi (flat head), Shimajiji (Japanese horse mackerel), Hamo (conger pike), and sweet shrimp.  As this is Kanazawa restaurant, Kochi was marinated with kelp tightening.

お造り2、バイ貝とサバ。貝が新鮮、サバがジューシー。夢中で食べてしまった。

Sashimi dish 2 with mussel and mackerel.  The shellfish is fresh and the mackerel is juicy.  Enjoyed them all.

バイ貝のキモを焼いてくれる。

They grill the shellfish liver.

合わせる酒は手取川、福正宗、菊正宗、苗加屋(のうかや)。中でもご主人お勧めの苗加屋の印象が強く残り、最後にリピート。

The sakes for pairing with foods are Tedorigawa, Fukumasamune, Kikumasamune, and Nohkaya. Above all, Nohkaya is chef's recommendation and is most impressive and repeat it at the end.

出始めの岩がき。

Japanese rock (summer) oysters, starting available in late June.

焼物1、甘鯛としまあじの西京焼。どちらもご主人お勧めで美味しい。

Grilled fish dish 1, Amadai (sweet bream) and Shimaaji (Japanese horse mackerel), both marinated in Saikyo miso and grilled.   Both are recommended by the chef and are delicious.

焼物2、浜長のご主人お勧めのノドグロ。「熱いうちにお醤油をかけてください、一緒に煮えて美味しいです」とのアドバイス。確かに油の乗った身に熱い醤油とレモンが絡むと美味しい。

Grilled fish dish 2, grilled Nodoguro (rockfish) recommended by Hamacho's chef.  Follow the chef's advice "Please sprinkle soy sauce while it's hot, and it becomes delicious when cooked together".  He is right, it is delicious when hot soy sauce and lemon are entwined with the oily fish meat.

加賀野菜の炊き合わせ。鮮やかな色。

Steamed Kaga (Kanazawa) vegetables.  Bright colors.

オコゼの唐揚げ。骨まできちっと揚がっている。

Deep-fried Okoze (scorpionfish).  Even its bones are deep fried.

「お酒に合います」と勧められたイカ焼き。メニューに無いゴロ(内臓)入りの干物。酒好きには堪らない肴。

Grilled squid, recommended by chef as "it goes well with sake."  Dried squid with Goro (internal organs) that is not on the menu.  A unbearable dish for sake lovers.

レンコンと百合根の腕もの。滋味深いお味。透き通った出汁の餡がしみじみと胃腸に染み渡る。

A soup bowl with lotus root and a lily root.  Delicious taste.  The clear broth soaks into the body.

メニューに無い雲丹ご飯。ご主人お勧め。雲丹は北海道産。

Uni (sea urchin) rice not on the menu.  Recommended by the chef.  Uni is from Hokkaido.

コシのある冷たいうどん。

胡麻と新生姜のアイスクリームと加賀梅酒のゼリー。黒胡麻がとても濃厚。胡麻、生姜、梅酒どれも甲乙丙つけ難し。

Black sesame and new ginger ice creams and Kaga plum wine jelly.  Black sesame tasted very rich. Sesame, ginger and plum wine are all tasty.

どれもこれも大変美味しく、お店のサービスも全て素晴らしかった。金沢の食文化、最高。

All are very delicious and all services are also excellent.  The food culture of Kanazawa is good.

今まで気にしていなかったが「浜長」はミシュランガイド掲載店だった。もちろんこれにかかわらず素晴らしいお店。

Didn't care about it until now, but "Hamacho" is a Michelin Guide listed restaurant.  Of course, it's a great place regardless of this.
